One-pot meals are the absolute best for camping!
When I go camping, I don’t want to lug multiple pots and pans to prepare my meal.
All I bring is my combo Dutch Oven Skillet. I absolutely love it for cooking while camping! I can use it as a skillet on our camp stove or place it over hot coals to use as a dutch oven.
And my Coleman stove is a two-burner stove, so while I love making amazing meals out in the wild, I can’t exactly make a multi-course meal. That stove space is limited!
Enter — one-pot camping meals! They are a lifesaver while camping. And, this one-pot beef stroganoff is GREAT.
There’s nothing like a hot pot of beef stroganoff to warm you up on a chilly camping trip.
This isn’t a meal I grew up eating very often, but somehow it still tastes just like home. This recipe is just that comforting.
One-Pot Camping Beef Stroganoff Recipe
One-Pot Beef Stroganoff
Ingredients
- 2 tbsp butter
- 12 ounces cremini mushrooms
- 1/2 chopped yellow onion
- 2 garlic cloves
- 1 lb lean ground beef
- 3 tbsp flour
- 4 cups beef broth low sodium
- 2 tbsp worcestershire sauce
- 2 tsp dried thyme
- 8 ounces egg noodles
- salt & pepper to taste
- 1/3 cup sour cream
Instructions
- Melt butter in the pan over medium heat.
- Sautee mushrooms until tender, about 3-4 minutes.
- Add onion. Sautee for about 5 minutes until tender. Add garlic and sautee until fragrant, about 2 minutes.
- Add ground beef and cook until brown. Be sure to "crumble" the beef as it cooks. Do not drain any excess fat if using lean ground beef. You want a bit of fat left in the pan.
- Stir in flour until it is browned.
- Stir in beef broth, thyme, Worcestershire, and egg noodles. Let the mixture simmer until the noodles are cooked, about 10 minutes. Add salt and pepper, to taste.
- Once noodles are done, stir in sour cream until heated, about 2 minutes. Serve immediately.
Tips for Preparing it at Camp
This is a delicious meal to prepare at home or to make while car camping!
If you’re preparing it at camp, I have a few tips to make the process easier.
I like to do as much meal prep at home as I can, to make things easier for me while camping. Chop your mushrooms and onions at home, and store in an air-tight container. You can also substitute the cremini for white button mushrooms, which often come pre-sliced in most grocery stores.
If you’re packing light, the thyme can be optional. (I’ve made it both ways when I forgot seasonings!) But, one of my favorite camping hacks is to store seasoning in tic-tac containers, so you always have a mini spice cabinet on the go.
